  • * 1/2 cup (85g) mini chocolate chips
  • * For the Frosting:
  • * 1 cup (240g) plain Greek yogurt (full-fat recommended)
  • * 2 tablespoons powdered sugar (or to taste)
  • * 1/2 teaspoon vanilla extract
  • * 2 tablespoons mini chocolate chips (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour an 8-inch round cake pan, or line with parchment paper.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk together the Greek yogurt, almond milk, maple syrup, egg, melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix. Gently fold in the 1/2 cup of mini chocolate chips.
  5. Pour the batter into the prepared cake pan and spread evenly.
  6. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
