This vibrant dip offers a creamy and smooth texture from ripe avocados, complemented by the distinct salty tang of feta cheese. Fresh lime juice provides a bright, zesty note, while a hint of garlic and fresh herbs adds aromatic depth. It is a refreshing and flavorful blend, perfect as an appetizer or a versatile spread.

Ingredients

  • 2 ripe avocados, pitted and scooped
  • 4 ounces feta cheese, divided (half crumbled, half cubed for topping)
  • 2 tablespoons fresh lime juice
  • 1 small clove garlic, minced
  • 2 tablespoons fresh parsley or cilantro, chopped, plus more for garnish
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste

Instructions

  1. Combine the scooped avocado flesh, fresh lime juice, minced garlic, salt, and black pepper in a food processor or blender.
  2. Process until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Gently fold in the crumbled feta cheese into the avocado mixture.
  4. Transfer the dip to a serving bowl.
  5. Arrange the cubed feta cheese on top of the dip and sprinkle with additional fresh chopped parsley or cilantro for garnish.
  6. Serve immediately with your choice of crackers, pita bread, or fresh vegetable sticks.

Notes

To prevent the dip from browning, press plastic wrap directly onto the surface if not serving immediately.

Adjust the amount of lime juice to achieve your desired level of tanginess.

For an extra layer of flavor, a pinch of red pepper flakes can be added to the dip.

Store any leftover dip in an airtight container in the refrigerator for up to 2 days.
