These Quark-Taler are light and fluffy, offering a delightful balance of mild sweetness and a subtle tang from the quark. Pan-fried to a golden perfection, they feature tender interiors and slightly crisp edges. Dusted with a delicate layer of powdered sugar and adorned with fresh blueberries, they present a comforting and satisfying dish suitable for breakfast or a light dessert.

Ingredients

  • * 250g (1 cup) low-fat quark
  • * 2 large eggs
  • * 50g (1/4 cup) granulated sugar
  • * 1 teaspoon vanilla extract
  • * 120g (1 cup) all-purpose flour
  • * 1 teaspoon baking powder
  • * Pinch of salt
  • * 2-4 tablespoons milk (if needed for consistency)
  • * 1 tablespoon vegetable oil or butter for frying
  • * For serving: Powdered sugar, fresh blueberries

Instructions

  1. In a large bowl, whisk together the quark, eggs, granulated sugar, and vanilla extract until smooth.
  2. In a separate bowl, combine the flour, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are fine. If the batter is too thick, add milk one tablespoon at a time until it reaches a pourable but still thick consistency.
  4. Heat a large non-stick pan or griddle over medium heat and add a small amount of oil or butter.
  5. Drop spoonfuls of batter (about 1-2 tablespoons each) into the hot pan, leaving space between them.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Remove the Quark-Taler from the pan and place them on a wire rack or plate. Repeat with the remaining batter, adding more oil or butter as needed.
  8. Serve warm, dusted with powdered sugar and topped with fresh blueberries.

Notes

* Do not overmix the batter; this helps ensure light and fluffy Quark-Taler.

* Adjust the heat as needed to prevent burning while ensuring they cook through.

* For extra flavor, add a pinch of cinnamon or lemon zest to the batter.

* These Quark-Taler are best enjoyed fresh and warm.

* Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and gently reheated.
