  • 500g low-fat quark
  • 3 large eggs
  • 50g erythritol (or other low-carb sweetener to taste)
  • 1 teaspoon vanilla extract
  • Zest of 1/2 lemon
  • Pinch of salt
  • 150g fresh or frozen pitted cherries
  • 1 tablespoon butter, for greasing

Instructions

  1. Preheat your oven to 180°C (350°F). Lightly grease a medium baking dish (approximately 20×20 cm or 8×8 inches) with butter.
  2. In a large mixing bowl, combine the quark, eggs, erythritol, vanilla extract, lemon zest, and a pinch of salt. Whisk until the mixture is smooth and well combined.
  3. Gently fold in the pitted cherries, distributing them evenly throughout the quark mixture.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Bake for 30-40 minutes, or until the top is golden brown and the casserole is set in the center. A knife inserted into the center should come out mostly clean.
  6. Remove from the oven and let it cool slightly before serving. It can be enjoyed warm or chilled.

Frozen cherries can be used directly without thawing.
